BILLIOTTE BISCUITS
The company Science 2 Food had the pleasure of collaborating with the Biscuiterie Billiotte in Besançon.
A technological support project has enabled the director of Science 2 Food to find the well-known biscuit and pastry formulations and processes from a previous career, while bringing benefits to the Biscuiterie Billiotte team.
Billiotte biscuits: between simplicity, terroir and indulgence
Billiotte biscuits are above all a concept of traditional biscuits sold in bulk, individually wrapped in a recyclable bag. There are shortbreads, cookies, cereal cookies, madeleines, cakes, soft macaroons, coconut rochers, muffins and brownies… Simple cookies that remind us of the sweets of our childhood!
A Franche-Comté biscuit factory very attached to its terroir, the Biscuiterie Billiotte also offers a variety of sweet and savoury dry wines… But what is the cut? In this land of pastures and cheeses, the dairy cows of the Haut-Doubs used to collect the cream from the manufacture of butter and use it to cook this delicious regional speciality: a flaky biscuit, decorated as you wish, with PDO Comté for example, or chocolate chips for the greediest!
It is a historic and well-known biscuit factory in Franche-Comté.
In the 1900s, Paul-Emile Billiotte began to make the 1st biscuits of the same name in Audincourt and sold them at fairs and markets in the region. Building on its success, this activity developed and lasted for several generations… Until 2000, the year in which the Biscuiterie Comtoise in Valentigney was created, making all kinds of biscuits under the “Billiotte” brand. In the 2010s, the company developed with the opening of a dozen stores in Franche-Comté.
In 2018, the Biscuiterie Billiotte was taken over by a family group, very attached to regional and artisanal values, already the owner of the Biscuiterie de Montbozon. In 2019, the Biscuiterie Billiotte moved to Besançon in new premises conducive to the development of the Franche-Comté company. It was joined in 2022 by the Biscuiterie de Montbozon, which moved into the same premises
